Neera jaggery is a type of jaggery made from coconut neera, a natural, sweet, and nutritious drink from coconut trees. Neera jaggery can be used as a substitute for regular sugar and jaggery.
How is neera jaggery made?
The coconut tree's immature flower blossom nectar (neera) is collected and boiled.
The unfermented sap is then filtered, refrigerated, centrifuged, processed, and packaged.
The mixture is poured into bamboo molds or granulated to create semisolid jaggery that solidifies into a crystallized hard substance.
